  8. Prepare 5 tbsp mustard oil

  11. Get 2½ inch Ginger paste,
  12. Prepare 1 medium size chopped tomato
  13. Get 2 tbsp green coriander leaves paste
  14. Make ready 2 tsp cumin powder,
  15. Prepare 1 tsp coriander powder
  16. Make ready 1 tsp mixed cloves,cardamom powder (garam masala)
  17. Make ready 500 gm potato
  18. Get 2 tsp turmeric powder,
  19. Prepare 3tbsp salt

Mine turned out to be exactly the way I wanted it. Kosha mangsho is a famous Bengali dry type mutton curry which is made in almost every Bengali's special occasion like Marriage, birthday, annaprason or for the guests. In every family there is a unique recipe of Kosha Mangsho. And I'm bringing over the later part of the pulao, scrumptious Mutton Kosha aka Kosha Mangsho or Spicy Dry Mutton Curry.

Instructions to make Dry mutton kosha(no water):
  1. At first marinate mutton with 3tbs salt, 2tsp turmeric and 1tbs mustard oil and cover it for 30mins, I will not use salt, turmeric again during cooking
  2. Then fry the potatoes well at medium to low flame with mustard oil, potatoes should be soft after frying, because the recipe is without water, so fry it in medium to low flame taking some times
  3. After frying potatoes pick up it, and give ½tsp cumin seeds,1 clove, 1 cardamom, ½ cinnamon stick, 2 black pepper in the same oil and wait till the smell comes
  4. Add chopped onion in the oil, keep the flame low and fry Onion slowly till it getting soft
  5. Add chopped tomatoes in it and also fry it till melting in the oil
  6. Add ginger,garlic,coriander paste in it and stir until the raw smell go away
  7. Add cumin powder, coriander powder, mixed (cinnamon, cloves, cardamom) powder, and stir continuously until all the mixture melt to each other
  8. Add mutton in the mixture and stir continuously, when everything will be mixed with mutton, cover the pan and keep the flame low,
  9. After 5 minutes again stir and cover it, do this process 5 times, and don't increase the flame now
  10. When you see that oil comes out from the mutton keep the mutton and the fried potatoes in a pressure cooker and cook it in medium flame
  11. After 3 city off the gas, and keep it until the pressure open automatically, after opening pressure if you have mutton fat mixed it and cover in the hot pressure for more 5 minutes, So it will be cooked, now serve the recipe with roti,luchi, parota 😍

For my all non-Bengali friends who have no clue let me explain a bit.
