It has a deep red colour and contains a considerable amount of fat compared to lamb, so it needs to be cooked low and slow to render the fat out. It has a rich, meaty and slightly gamey texture and flavour. Take the roast and cut little holes in it and stuff the garlic slivers into the holes. Make a paste with the olive oil, herbs and spices and rub all over the lamb roast.

  2. Now add ginger garlic paste raw Papaya
  3. Mix all above ingredients with hand. apply on leg and leave it overnight in fridge
  4. After 10-12 hour or a day take a pot add 2 tb spoon oil add marinated leg cook till meat tenderiz(ik do bar palat lain leg ko)
  5. Now put it on foil dish add vegetable then put it on the oven almost 20 minutes
  6. Serve with Rus bukhari rice, tomato chattni

If you using vegetables, cut them and place in the slow cooker. Put the lamb roast on top, cover and cook on low all day. First we made essential masalas then we apply the mixed masalas to the whole lamb. Now, also add powdered spices that is red chilli powder, whole spice powder and salt. Grind spice in to a fine powder.
