Finally, dry roast peppercorns, cumin seeds, coriander seeds, cloves, and cinnamon over low heat until a nice aroma comes. Then transfer them to a blender or a mixie jar and grind it coarsely. Mutton chukka is a world famous non vegetarian recipe, the most ordered dish at restaurants. You can find a lot of variations of this recipe which differs from region to region.
Instructions to make Mutton Chukka:
- Dry roast the ingredients given for masala powder and grind to a fine powder.
- Wash and clean the Mutton pieces.
- In a cooker add oil. Once oil gets heat, add cumin seeds.
- Add dry red chilli, shallots and curry leaves. Saute till shallots becomes translucent.
- Add the Mutton pieces, turmeric powder and salt. Fry till it releases water and water gets dried.
- Add the masala powder and mix well. Then add required water. Close the lid and leave for 10 whistles. Whistles depend based on the quality of the mutton.
- Open the lid once the pressure goes off and add some chopped curry leaves. Check for consistency if needed you can make it as gravy or dry. Transfer to a bowl.
- Now it's ready to serve. Serve hot for Curry Dosa or as a Sidedish for Sambar Rice or Rasam Rice or Curd Rice.
