- Roll out pastry and place in greased pie 9 inch tin.
- Dice potatoes and place in boiling water on high heat for 10 mins, till soft, skins on.
- Place all spices, olive oil, tomato paste and garlic into a pan to sautee for 5 mins and then add 30ml of water and the spinach to wilt for 1 minute.
- Drain and mash the potatoes and add the curry paste mix, spinach and green diced pepper and mix to combine.
- Take the pastry out of the oven and fill with the mixture then return to the oven for 15 minutes on 100C fan.
